Mom’s Delicious Apple Puffed Pancake Recipe

Every person has a favorite recipe from their childhood. It was usually cooked by your mom or grandparent. For Meg, her favorite childhood recipe was apple puffed pancakes from her mother. Meg might be a mother of her own now but she still craves the apple puffed pancakes from her mother’s kitchen.

Meg’s mother was in town and so she just had to share the easy and delicious recipe for everyone else to enjoy as well.

Apple puffed pancakes is normally a breakfast or brunch recipe but, for diehards such as Meg, these pancakes can be eaten for any meal and that includes dinner. As a busy mom it is always nice to find a recipe that includes the oven. Being able to put your meal into an oven and shift your focus elsewhere is always a bonus for parents.

Good news, these delicious pancakes are baked and not cooked on the stovetop!

Needed ingredients:

  • 6 eggs
  • 1 cup whole milk
  • 2/3 cup flour
  • 1⁄2 tsp salt
  • 3 TBSP butter
  • 3 large apples sliced
  • 1⁄4 cup brown sugar
  • 1 tsp cinnamon

Before starting your batter make sure to preheat your oven to 425° degrees.

You are going to need to make the batter for your apple puffed pancakes. Every time you add an ingredient you will have to mix it up. First, crack and beat the six eggs. You will then add in the one cup of whole milk and mix the two ingredients. The last two parts of the pancake batter will be the salt and 2/3 cup of flour. Do not skip the salt because it does add the needed flavor to the batter.

Meg’s mom does not want you to worry if the batter is a bit lumpy, it will still be super delicious.

It is time to put the batter to the side and grab a 9×9 dish. Add the unmelted 3 tablespoons of butter to the dish and stick it in the oven to melt. Once the butter has melted, bring the pan back out and layer the sliced apples to the buttery dish. You will then put the dish back into the oven until the butter is sizzling.

Reminder: do not forget about your dish and keep a close eye on it to see when the sizzling starts.

You will want to add the batter into the very hot dish of apples and butter. Once the batter is in, it is time to evenly sprinkle the brown sugar and cinnamon on top of everything. This means it is time to start baking your yummy apple puffed pancakes for around twenty minutes.

The apple pancake will puff up and turn into a yummy golden color around the twenty minute mark.

This is not your average apple pancake, as you can tell by the recipe. Meg’s mom explains that,
